Pumpkin Pride

I don't know when I began enjoying pumpkin-flavored things, but BOY DO I EVER LOVE IT. A list of pumpkin-flavored items I have consumed this holiday season (in no particular order):
  • pie
  • chai
  • frozen yogurt
  • ice cream
  • custard
  • spice bars
  • pancakes
  • cake
  • bread

I think that's all of them. They were all very tasty. If you know of any good pumpkin recipes, please feel free to share them. =)

Try pumpkin gnocchi with sage fried in butter. Squash/sage/butter in general is a winning combination.

From Don & Steve's Mom: Try Pumpkin Pie Dip, made as follows. 8 oz cream cheese at room temp
2 cups powdered sugar
1 15 oz can pure pumpkin (not pie filling)
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Mix cream cheese and powdered sugar until smooth (electric mixer helps a lot). Add pumpkin, cinnamon, and ginger. Beat until well combined. Chill for 8 hours, but let stand at room temp for 30 minutes before serving. We love this with gingersnaps, though it also works well with apple or pear slices.

From Mom: Pumpkin Cake
(recipe from Lou Williams - your first grade teacher - 10/19/83)

Preheat oven to 350 degress Fahrenheit

2 cups all-purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt

4 eggs
2 cups sugar

1 cup oil

2 cups pumpkin (16 oz. can)

1 cup nuts (english walnuts) - optional

(She adds raisins, too, but she does not say how many ....)

Grease tube pan or Bundt pan and
lightly sugar it after it is greased.

Measure and sift dry ingredients together.

Mix eggs and sugar and beat until eggs are light.

Add oil. Mix well.

Add pumpkin. Mix well.

Add dry ingredients. Mix well.

Add nuts (if using nuts). Mix gently.

Add raisins (if using raisins). Mix gently.

Pour into pan.

Bake in pre-heated oven for one hour.

Mrs. Williams shared this recipe with me after she served it to Jack Darrell and I when we showed up to help her with some painting one evening. She put whipped cream on it.

This is my favorite holiday treat. Pumpkin fudge. This isn't my recipe, but it looked better than mine. Mine's that fake fudge with marshmallow creme and such.

INGREDIENTS:
3 cups white sugar
1 cup milk
3 tablespoons light corn syrup
1/2 cup pumpkin puree
1/4 teaspoon salt 1 teaspoon pumpkin pie spice
1 1/2 teaspoons vanilla extract
1/2 cup butter
1/2 cup chopped walnuts
(optional)

DIRECTIONS:
1. Butter or grease one 8x8 inch pan.
2. In a 3 quart saucepan, mix together sugar, milk, corn syrup, pumpkin and salt. Bring to a boil over high heat, stirring constantly. Reduce heat to medium and continue boiling. Do not stir.
3. When mixture registers 232 degrees F (110 degrees C) on candy thermometer, or forms a soft ball when dropped into cold water, remove pan from heat. Stir in pumpkin pie spice, vanilla, butter and nuts. Cool to lukewarm (110 degrees F or 43 degrees C on candy thermometer).
4. Beat mixture until it is very thick and loses some of its gloss. Quickly pour into a greased eight-inch pan. When firm cut into 36 squares.
